I am so all about pumpkin everything. This weekend I had two different types of pumpkin soup, and on Sunday morning, that glorious first day after setting our clocks back, C-Man and I made pumpkin pancakes. In. The. DARK. But hey! They turned out really good. We ate them with butter, plain yogurt and real maple syrup. Oh, and a huge coffee for mom. We used this recipe, but modified it a bit (used all whole wheat pastry flour and more buttermilk than the recipe called for).
